What would Texas be without some good ole Tex-Mex? Costa Vida, located in Colleyville Texas, is the perfection Texan and Mexican fusion food stop with some of the most delicious food around. The menu offers classics items such as enchiladas, quesadillas, and burritos to items with fun twists like the Mexican inspired salad which combines seafood and mangoes, the customizable taco bowls, and salads. Portions are large and reasonable priced, so this location is great if you’re taking the family out for dinner. Kids meals and daily specials are also available. The best part in my opinion however, is the dessert. Ranging from chocolate chip cookies to authentic flan and sweet cinnamon tortillas (proceed with caution as the cinnamon goodness is very addicting making this dessert my personal favorite) the dessert menu is a perfect mix of both classic Texas and Mexican sweets, perfect for satisfying your sweet tooth after a savory meal. Remember to keep space for dessert! Costa Vida also provides Jarritos which is a popular Mexican soft drink and Horchata which is an almond cinnamon milk drink also popular in Hispanic countries. Capturing the essence of both cultures is crucial when labeling a restaurant as ‘Tex-Mex’ and Costa Vida nailed both cultures perfectly.

Founded in 2003, Costa Vida has become a popular hot spot for many individuals, especially locals. I’ve even got people visiting me in Colleyville from out of state addicted to Costa. They go once and then they’re hooked. I guarantee the first thing they’ll want in their stomach when they’re back in the area is Costa. Depending on the weather, the patio is open to visitors. The overall environment of this restaurant is bubbly and lively. The staff is friendly, not greedy with portions, and greet you with a smile as you enter the doors. They pile the delicious food on your plate which includes sides of rice, pico de gallo, and your choice of their black, pinto, or refried beans which are all vegetarian. Speaking of vegetarians, the location is vegetarian and vegan friendly and a healthy alternative to fried fast food. A delicious meal and it’s healthy?! That’s a win-win situation. If you’re ever in the area, don’t be shy and stop by for some amazing Texas-Mexican fusion food right in the heart of Dallas. You won’t be disappoint and you might even become a regular..
